Who we are

The Accademia dei Maestri del Lievito Madre e del Panettone Italiano was born from the widespread need to defend, promote and disseminate the artisan production of leavened products with mother yeast.

 

It is an autonomous organization, which carries out activities of promotion, training and cultural and professional updating and not currently specifically identifiable in the national and international scene.

The project and values

The Academy wants to join forces towards a single purpose in order to guarantee a comparison, respecting craftsmanship and the exclusive use of raw materials without chemical additives and preservatives aimed at modifying their naturalness.

Mother yeast must be the main ingredient of all the products created by the members of the Academy. 

The association is committed to the constant qualification of Italian artisan production and dissemination through events and training.
